Andres Velez describes PigLatin as “a food truck that offers pork as our centerpiece — so it’s not necessarily Colombian food or Cuban food or Asian food — as long as it’s got pork, we’ll make something original out of it.”

This is PigLatin’s second Best In Business win in two years and Velez, who owns PigLatin with wife Patricia, says they appreciate the community recognition of  their hard work, and they’re excited to be part of the Springs’ burgeoning food scene.

“It’s a growing and changing market — a lot of people are open to new things now. Ten years ago when I first got here, there were very limited options; now the food scene has really taken off, so it’s great to be a part of that scene,” he said.

Velez said since last year’s win, PigLatin has started offering delivery via UberEATS, and they are on the home stretch in their search for a brick-and-mortar location — or two. “We’re looking downtown for sure, and maybe another location in the north area, maybe something on the Westside,” he said. “I think we’re zeroing in on the spots now so we can offer better food, more food and more options.”
